Dutch Oven Chicken Stir Fry

I love cooking in my Dutch oven, and this recipe is a favorite at our house or on a family camping trip. Chicken, vegetables and great spices make this a winner.
Prep Time: 45 minutes
Cook Time: 1 hour, 15 minutes
Ingredients:
  • 3 tablespoons olive or peanut oil
  • 4 chicken breast halves, cut into thin strips
  • 1/4 teaspoon ground ginger
  • 3 green onions
  • 2 large carrots
  • 3 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup snow peas
  • 1/2 cup soy sauce
  • 1/2 cup apple juice
  • 3 tablespoons corn starch
  • 8 ounces of sliced mushrooms
Preparation:
Mix soy sauce and apple juice
Slice chicken breasts into thin strips
Marinate chicken slices in soy sauce and apple juice marinade for about 30 minutes
Cut green onions into 1/2 inch sections, on a diagonal
Slice carrots into thin discs
Cover the bottom of the dutch oven in oil, not too deep
Drain marinade off of the chicken and set marinade aside
When oil is hot, add chicken and sprinkle ginger on it
Stir fry until translucent
Remove chicken and set aside
Add onions, carrots, cauliflower and broccoli
Stir fry for about 3 minutes
Add chicken back into mixture and stir fry for 3 minutes
Mix marinade with corn starch and add into dutch oven
Add snow peas and mushrooms
Cook and stir until marinade thickens
Serve
