This is one of my all time favorite Dutch oven breakfast recipes. I have used it on many family camping trips and on at least a dozen campouts with my Scout troop. It is certainly not a low fat or low carb meal, but it is hearty and will equip the family or the Scouts for a full day of activities or hiking.
Prep Time: 30 minutes
Cook Time: 45 minutes
Total Time: 1 hour, 15 minutes
Yield: 8-10 servings
Ingredients:
- 12 eggs
- 1 two-pound bag of frozen country potatoes (hash brown cubes)\
- 1/2 pound of bacon, pre-cooked
- 1/2 pound of Italian sausage
- 24 oz of grated cheddar cheese
- 1 onion diced
- Salsa
- 1 tablespoon vegetable oil
Preparation:
Crack eggs into mixing bowl and then mix together and set aside
Heat 12 inch Dutch oven over 14 hot briquettes
Coat bottom of the Dutch oven with vegetable oil
Place the sausage and onion in the Dutch oven and stir until the sausage is browned
Remove sausage and onion and blot them dry with a paper towel
Remove excess grease from the Dutch oven
Place the frozen potatoes into the Dutch oven, stir until they are thawed and begin to brown
Mix the bacon, sausage and onion into the potatoes, then pour the beaten eggs over the entire mixture
Cover the Dutch oven with a lid and place 14 hot briquettes on top
Cook until the eggs are firm and then top with grated cheese
Cook until cheese is melted
Remove from the heat and serve with salsa as desired
