Another easy recipe for fathers and kids to make, this time for the Christmas holiday season. Peanut brittle is a traditional holiday candy and can be served at a party or packaged for neighbors and friends. And this recipe is quick and easy to make, and is a favorite for many fathers and families I know.

Ingredients:
- 1 1/2 cups raw shelled peanuts, skins on
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/8 teaspoon salt
- 1 teaspoon butter
- 1 teaspoon vanilla
- 1 teaspoon baking soda
Preparation:
Stir together peanuts, sugar, corn syrup and salt in a 1 1/2 quart microwave safe container. Cook 8 minutes on high in microwave, stirring well after 4 minutes. Then stir in butter and vanilla. Microwave 2 minutes more on high setting. Add baking soda and quickly stir until mixture is light and foamy. Immediately pour onto lightly greased baking sheet. Spread it to 1/4 inch thickness and allow to cool. When cooled, break into pieces and store pieces in airtight container. Makes about 1 pound of peanut brittle.
